FRIED****Fried Rice (Actifry)

21/12/16 - VVG for both. Dan loved it. Easier than fried rice in the wok. Adding the egg raw really gums up the blade though, try making the usual omelet and cutting it into strips to stir in briefly at the end.

Ingredients

  • 1 tablespoon olive or canola oil
  • 1 teaspoon sesame oil, divided
  • 1/3 cup mixed colour peppers, in small dice (don't add jalapeno, it's too much with the sambal and my chilies for garnish)
  • 1 shallot, thinly sliced
  • 2 cups leftover cooked basmati or jasmine rice
  • 1 clove garlic, minced
  • 1 " piece fresh ginger, finely chopped
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1 scant teaspoon sambal oelek
  • 2 eggs, beaten
  • 2 - 3 ounces leftover cooked chicken (I used leftover pork stick from the Actifry the first time, which i found overly hard)
  • 4 ounces small cooked shrimp, cut in half if necessary
  • 1/2 cup frozen peas, thawed
  • 2 scallions, thinly sliced on the diagonal
  • SAUCE:*
  • 1 teaspoon sesame oil
  • 2 teaspoons kecap manis
  • 2 teaspoons dark soy sauce
  • 2 teaspoons light soy sauce
  • 1 teaspoon rice vinegar

Step 1

*Add* peppers and shallot to oils in Actifry and cook for 5 - 8 minutes, until softened.

*Add* everything through sambal and cook for 3 minutes to blend and heat through. (Careful not to go too far at this stage, I cooked it for almost half and hour in total and found it over-dry [also defeats the "easy" part])

*Drizzle* eggs over, add chicken or pork and cook for 3 minutes longer. (See note above re: raw eggs)

*Add* shrimp, peas and scallions and cook for 3 minutes more.

*Combine* sauce ingredients in a small bowl and drizzle over. Cook for 2 - 3 minutes longer until blended and hot, then serve. Garnish mine with freshly chopped Thai chili (1 is plenty) chopped cilantro and a lime wedge.
