  • 1 cup oil
  • 2 cups sugar
  • 3 eggs
  • 2 cups grated zucchini
  • 3 cups flour
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1 tablespoon vanilla
  • 1 cup nuts (optional)

Preparation

Step 1

This recipe makes two loaves of nut bread

Cream oil and sugar

Beat in Eggs and zucchini

Combine dry ingredients and add to batter.

Stir in nuts and vanilla

pour into two greased and floured loaf pans.

Bake at 325 for about one hour

Test with toothpick
