  • 1/2 cup all-purpose flour
  • 1/2 cup finely chopped walnuts
  • 1 teaspoon paprika
  • 3/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 3/4 teaspoon grated lime peel
  • 1/2 teaspoon garlic powder
  • 1/2 cup lime juice
  • 1 (2-1/2- to 3-pound) chicken, cut into 8 pieces
  • 1/4 cup vegetable oil

Preparation

Step 1

Preheat the oven to 350 degrees.

Line cookie sheet with foil and coat with nonstick vegetable spray; set aside.

In shallow dish, combine the flour, walnuts, paprika, salt, pepper, lime peel, and garlic powder. Place lime juice in another shallow dish. Dip chicken pieces in juice, then coat with walnut mixture, pressing it onto chicken with back of spoon.

Place coated chicken in single layer on prepared cookie sheet; drizzle oil over top.

Bake for 50 to 60 minutes or until chicken is golden and no pink remains.
