Ingredients

  • 2 3/4 cups flour
  • 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1 1/2 cups sugar
  • 1/2 cup butter, softened
  • 1 egg
  • 1/3 cup lemon juice
  • 1 tsp. grated lemon zest

Preparation

Step 1

Sift together flour, baking powder, baking soda, and salt. Set aside. In large mixing bowl, beat sugar and butter until fluffy; beat in egg. Gradually add dry ingredients alternately with lemon juice. Mix well. (Dough will be soft). Cover and chill overnight in refrigerator.

Preheat oven to 375°. Roll out cookies on a well-floured surface. Cut with floured cookie cutters. Place on parchment lined baking sheets. (If not using parchment paper, you will need to grease your pan). Bake 8-10 minutes. Cool on wire racks.
