Ingredients

  • 2 pounds baby Yukon Gold potatoes, halved (or quartered if large)
  • 1 cup + 2 Tbsp distilled white vinegar
  • 1 Tbsp kosher salt, plus more
  • 2 Tbsp unsalted butter
  • 2 Tbsp chopped fresh chives
  • Flaky sea salt
  • Freshly ground black pepper

Step 1

Mix a cup of white distilled vinegar and a tablespoon of salt. Make sure you add enough water to easily cover the potatoes and boil for a good 20-25 minutes. Keep checking your potatoes with a fork. You’ll know when they’re done when you can easily push your fork through.
Throw some butter into a skillet and heat until it melts. Add in Kosher salt and pepper, then add in your potatoes turning them over again and again until they get nice and golden which typically takes 8-10 minutes. You can garnish with fresh chopped chives.
