Ingredients
- ● 3 Onions
- ● 2 Carrots
- ● 3 Celery stalks
- ● 5 Garlic cloves
- ● 5 sprigs Thyme
- ● 1 cup chicken broth
- ● 1 Turkey
- ● butter
- ● 1 tbsp salt
- ● 2 tsp pepper

Preparation
Step 1
1. Baste Turkey parts with butter and preheat oven to 275℉
2. Place veggies, garlic, thyme and broth on cookie sheet/ cover with cooling rack.
3. Put turkey parts (breast or thighs) on top.
4. Cook for 1 hour and turn over and cook another hour. (breast- 160℉; thighs- 170℉)
5. Increase oven temp to 500℉ and cook for 15 minutes to brown turkey.
6. Let sit 20 minutes before carving.
7. Gravy:
a. 3 Tbsp butter melted
b. 3 Tbsp flour
c. brown butter and flour
d. add 2 cups liquid (juices or low sodium chicken broth) and mix with butter and flour
e. add 2 bay leaves.
