Ingredients
- 1 tbsp olive oil
- 1 tomato
- 4 oz crumbled feta cheese
- 2 eggs
- 1 pinch of paprika
- 1 pinch of salt
- 1 pinch of pepper
- 1 sprig of oregano

Preparation
Step 1
Heat your oven to 350°F (l80°C). Pour the olive oil into a cold baking dish and brush surface of the dish.
Slice the the tomato and place the slices into the dish, place half of the feta cheese over top.
Break the two eggs over the tomato and feta, and sprinkle with the remaining feta, paprika, salt and pepper.
Bake, uncovered, until the eggs are set and the feta has melted, about 20 minutes.
In the meantime, chop the fresh oregano. Just before serving, sprinkle the oregano over top.
