Ingredients

  • 1/2 cup cold butter
  • 1 cup flour
  • 3/4 cup chopped pecans, divided
  • 1 8-oz. pkg. cream cheese, softened
  • 1 cup confectioners' sugar
  • 1 carton (8 oz) frozen whipped topping, thawed, divided
  • 3 1/2 cups cold milk
  • 2 small pkgs. instant butterscotch or vanilla pudding

Step 1

In a bowl, cut butter into flour until crumbly; stir in 1/2 cup pecans. Press into an ungreased 13-in x9in x 2in baking pan. Bake at 350° for 20 min. or until lightly browned. Cool. (about an hour).

In a mixing bowl, beat cream cheese and sugar until fluffy. Fold in 1 Cup Whipped Topping; spread over crust. (I put a little PAM on the spatula to prevent crust from pulling up from the mixture).

Combine Milk and pudding. (it seems very liquidy at first, but just keep beating until it thickens. about 4 minutes). Pour over cream cheese layer. Refrigerate until set (about 15-20 minutes). Top with remaining whipped topping and pecans. Refrigerate for 1-2 hours.
