Ingredients
- 1 cup fresh prepared salsa
- 2 tablespoons chopped cilantro
- 2 tablespoons finely chopped green onion
- 1 tablespoon ketchup
- Juice of 1/2 lime
- 1/2 cup cooked bay shrimp

Step 1
A few notes: 1) I suggest you double the recipe as it disappears quickly! 2) You can find cooked bay shrimp in most seafood departments (as well as in the freezer section of most markets)*. Canned shrimp are not recommended. 3). To stretch your shrimp dollar and add fresh crunch, add another 1/2 cup of salsa and 1/2 cup chopped seeded cucumber.
MAKES 1 ½ CUPS
1. In a medium bowl, combine all ingredients except shrimp, stirring well to combine.
2. Gently fold in the shrimp, and top with additional cilantro, if desired.
