Italian Three Bean Chili

Ingredients
- 1/2 cup chopped red onion
- 1 clove garlic, minced
- 2 Tbs. olive oil
- 1 15-oz. can tomato sauce
- 1 15-oz. can black beans, rinsed
- 1 15-oz. can white beans, rinsed
- 1 15-oz. can diced tomatoes
- 1 cup frozen edamame
- 1 4 1/2-oz can diced green chili peppers
- 1/2 cup water
- 1 Tbs. balsamic vinegar
- 1 can or less sliced black olives
- 2 Tbs. fresh cilantro
- cooked rice, pasta or couscous
- shredded mozzarella cheese

Preparation
Step 1
In a large saucepan heat oil. Add red onion and garlic, and cook until tender, about 5 minutes. Add remaining through vinegar. Bring to a boil, reduce heat, cover and simmer for 20 minutes stirring occasionally. Stir in olive and fresh cilantro, and simmer covered for another 5 minutes. Spoon rice, pasta or couscous into bowls and top with chili.
Note: It was thick so I added more water. Wasn't spicy enough so need to add something to kick up the heat. I served it over couscous. Think that or rice would be best. Afterwards I mixed the couscous into the chili and froze it that way.
