Ingredients
- 3 1/2 cups diced rhubarb
- 3/4 cup white sugar
- one boxed cake mix (white, yellow, lemon or spice)
- 3 tablespoons poppy seeds
- 1/2 cup raisins (more or less to taste) OR
- 1/2 cup raisins OR
- 1/2 cup sliced almonds

Preparation
Step 1
Arrange rhubarb on the bottom of a lightly greased 9 x 13-inch pan. Sprinkle with the sugar. Prepare the batter from the cake mix using one less egg than the instructions on the box suggest. Fold in poppy seeds, raisins or sliced almonds. Pour the batter over the rhubarb. Bake according to the instructions on the box. Remove from the oven; allow to cool slightly before cutting.
