Ingredients

  • 2

    lbs flank steak

  • 1

    Tbsp olive oil

  • 1

    Tbsp coarsely ground black pepper

  • 1

    tsp garlic salt

  • 1

    tsp onion powder

  • ¼

    tsp cayenne pepper

  • 3

    Tbsp crumbled blue cheese

  • 2

    Tbsp butter, softened

  • 1

    tsp fresh chives

Directions

1. Pat steak dry and rub all over with oil. Stir together black pepper, garlic salt, onion powder and cayenne in a bowl, then rub evenly over both sides of steak. 2. Mash cheese with butter in a bowl and stir in chives. 3. Preheat broiler. Line a large rimmed baking sheet with foil and set an oven rack on it. Broil steak 4 inches from heat until an instant-read thermometer inserted in center registers 125F for medium-rare, 3 to 4 min per side. 4. Let rest, loosely covered with foil, 10 to 15 min. Cut steak across grain into thin slices and serve with cheese butter.
