Ingredients

  • 1 (12 oz) pkg al fresco Sweet Apple Chicken Sausage, fully cooked, cut into 1/2" slices
  • 1 tbsp Extra Virgin Olive Oil
  • 1/3 cup fresh scallions, chopped
  • 3 apricots, dried, finely chopped
  • 2 cups white rice,long grain, cooked (jasmine or basmati)
  • 1/2 cup chicken broth, fat free, reduced sodium
  • 1/4 tsp sage, ground
  • 1 tbsp parsley,fresh, chopped
  • 1 cup yogurt, plain, nonfat Greek style
  • 1/3 cup basil, fresh, chopped
  • 1/4 tsp salt
  • 1 tsp black pepper, ground
  • 1/4 cup almonds, slivered
  • 2/3 cup grapes, red European type varieties, fresh (seedless), quartered

Preparation

Step 1

In medium sauté pan, add oil and sauté scallions for 3 - 5 minutes. Add the sausage slices and apricots, sauté for 5 minutes. Add rice, broth, simmer 1 minute, then add the sage, and parsley. Cook for another 2 - 3 minutes.

Add yogurt and basil, and heat thoroughly 1 - 2 minutes.

Season with salt and pepper. Fold in grapes. Place in large bowl or serving dish and top with almonds. Serve either warm or cold.

Note: If almonds need roasting, preheat the oven to 350 degrees. Spread the almonds in a pie plate and toast in the oven until golden brown, approx. 4 minutes then cool.
