Ingredients
- 1 sm. Onion Salt and Pepper to taste
- 2 Cloves Garlic (crushed) 2 Tbsp. Butter
- 4 Scallions (chopped) 1 Cup Dry Sherry
- 2 Tbsp. Olive Oil 2 Tbsp. Lemon Juice
- 8 Chicken Breast 1 Tbsp Capers (chopped)
- 1/2 Cup Flour 2 Tbsp. Chicken Stock (opt)
- 2 Tbsp. Paprika

Preparation
Step 1
Sauté onions, garlic and olive oil. Remove and set aside. Pound chicken flat between wax paper. Mix flour, paprika, salt and pepper in a flat bowl. Dip chicken and cook in butter until lightly brown on either side (2 to 3 min.). Add sauté onion garlic and olive oil. Over high heat add lemon juice, sherry and caper. Should thicken a little (if too much add more sherry to thin). garnish with lemon slices and parsley.
