Salted Caramel Shortbread

Ingredients
- Crust:
- 1/4 cup icing sugar
- 1/2 cup butter
- 1 cup flour
- 1 tbsp milk
- Caramel:
- 3/4 cup butter
- 1/2 cup sugar
- 3 tbsp light corn syrup
- 14-oz can sweetened condensed milk
- 16 oz chocolate
- 1/4 cup butter

Preparation
Step 1
1. Preheat oven to 350 deg F and line a 8" x 8" pan with parchment paper.
2. Mix first four ingredients for crust and press into prepared pan. Bake for 20 minutes until golden. Cool.
3. While crust is cooling, prepare caramel.
4. In medium saucepan, melt butter with sugar. Add corn syrup and sweetened condensed milk. Stirring constantly, bring to a rapid boil over medium-high heat. Decrease to medium, continue cooking 6-8 minutes, whisking constantly. Mixture should be a deep golden colour.
5. Pour caramel mixture onto shortbread crust and cool.
6. Once cooled, cut into squares.
7. Dip in melted chocolate.
