Ingredients
- 1 box Catelli Smart Veggie macaroni
- 1 cup baby spinach
- 1 red pepper, cubed
- 1 small can sliced olives
- 1/2 cup marinated sun-dried tomatoes
- 1/2 cup feta cheese, crumbled
- 1 batch pesto vinaigrette
- PESTO VINAIGRETTE RECIPE
- PREP TIME: 1 MIN TOTAL TIME: 1 MIN
- 1/2 cup olive oil
- 1/2 cup pesto
- 1/2 cup apple cider vinegar
- 1 tbsp dijon mustard
- 2-3 tsps honey (sweeten to taste)
- Add all of the ingredients in a mason jar, seal and shake.
- Can stay in the fridge for up to a week.

Preparation
Step 1
Cook the Catelli Smart Veggie macaroni according to package directions, set aside to cool.
Once the macaroni is cooled, add the baby spinach, red pepper, olives, sundried tomatoes, and cheese.
Toss with Pesto Vinaigrette.
