Ingredients
- 1 20 ounce bag frozen shredded hash browns
- A bunch of scallions, chopped
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder
- 1 cup grated Parmesan cheese
- 2 tablespoons olive oil

Preparation
Step 1
Mix all the ingredients together. Yes, use the hash browns frozen, no need to thaw.
Spray a muffin pan with a cooking spray.
Fill with the hash brown mixture.
Push the hash browns down into the cups with the back of a spoon.
Bake at 350 degrees for 45 minutes.
I made them the day before. I thought mine were not as brown as they should be, so I sprinkled with paprika and add a little more Parmesan cheese on top. I reheated them on 350 degrees, about 10-15 minutes.
