Snowman Oreo Truffles

- 8 oz cream cheese softened (1 package)
- 36 Oreo cookies crushed
- 2 1/2 cups white candy melts (highly recommend Godiva brand)
- 20-24 mini Oreo cookies
- icing or sprinkle decoration

Preparation
Step 1
Place Oreos in a plastic bag and crush with the flat end of a meat tenderizer or with a rolling pin. Set aside.
Using a table mixer or hand mixer + large bowl, beat cream cheese on low for 1 minute. Keeping speed on low, slowly add Oreo crumbs until combined. Use a spatula to thoroughly scrape along the sides and bottom of the bowl, then beat again for another minute to ensure ingredients are thoroughly blended.
Roll Oreo mixture into 1 inch balls and place on a baking sheet. Chill cookie balls in the freezer for 1 hour.
Cover another large baking sheet with parchment paper (to help with cleanup), then set nearby.
In a medium bowl, heat the candy melts per package instructions.
Using a toothpick, spear an Oreo cookie ball and dip it in the melted candy. Use a spoon or spatula to help completely cover the ball. Lift cookie ball a few inches above the candy and shake gently, removing any excess. Place coated cookie ball on the parchment covered baking sheet. Press a Mini Oreo on top for the hat (usually in the place where the toothpick was). See notes section for tips & tricks. Repeat this step until all cookie balls are coated.
Place coated Oreo cookie balls back in the freezer for another 30 minutes.
Decorate the face of your snowmen as you see fit. I highly recommend using icing bags (or the snipped corner of a ziplock bag) for precision.
Keep melting snowmen cookie balls refrigerated until ready to eat.

If you have trouble detatching the toothpick from the cookie ball, use a spoon to press down on the cookie. If this leaves a hole, just spoon in some more melted candy to fill it in.
Wipe off the toothpick in between dipping so that any lingering cookie crumbles don't end up in the white candy melt. It's inevitable that you will have a few crumbles in the candy near the end, but it will be far less if you keep the toothpick clean.
After you've dipped 10 cookie balls, reheat your candy for another 15 seconds. From there, consider reheating the candy after every 5 cookie balls. You want the candy to stay as fluid as possible.
