Ingredients

  • 1 cup of quinoa
  • Chicken broth (use the amount of broth specified by your quinoa product)
  • 1/2 small red pepper, cut into 1/4 in dice (about 1/2 cup)
  • 1/3 cup toasted sliced almonds
  • 1/3 cup craisins
  • 2 tbsp thinly sliced scallions (optional)
  • 3/4 tsp cumin
  • 1/2 tsp kosher salt
  • 2 tbsp lemon juice
  • 1 tbsp extra virgin olive oil
  • 1 tbsp honey
  • Freshly ground pepper

Preparation

Step 1

Place quinoa in a fine mesh strainer and rinse several times in cold water. Drain well and set aside.

In a medium saucepan, bring the broth to a boil. Stir in quinoa and cook according to package directions until the liquid is absorbed.

Transfer to a large bowl and fluff gently with a fork every few minutes until grains cool.

Stir in the bell pepper, almonds, craisins, scallions as desired, cumin, and salt until well combined. Whisk together the lemon juice, olive oil, and honey in a small bowl until well blended. Stir into the quinoa mixture until well coated with the dressing. Season with additional salt and pepper to taste.
