Ingredients

  • one chopped jalapeño (take out the seeds if you don't want the spice
  • 2 cloves garlic, chopped
  • 2 cans of whole kernel corn (not creamed corn)
  • one block of cream cheese
  • 2 Tbl butter
  • large handful of grated cheddar and Parmesan
  • salt and pepper to taste
  • Breadcrumbs
  • 1/2 cup grated Parmesan
  • 1/2 cup chopped herbs (mix of thyme, sage or what is on hand)

Preparation

Step 1

Preheat oven to 375.

In a saucepan or small pot (anything with high sides saute jalapeno and garlic until they start to soften. Add corn, cream cheese, butter and the handful of cheddar/parmesan, stirring until melty. Season with salt and pepper. More cheese can be addid if needed.

Pour into baking dish and sprinkle with breadcrumbs, remaining Parmesan and herbs.

Bake for 15 minutes until cheese is melted and bubbling, about 15 minutes.

Can be prepared the day before—just skip the breadcrumb topping until you're ready for the oven.
