Ingredients
- 1 tbs extra virgin olive oil
- boneless chicken breasts
- kosher salt
- pepper
- 1/4 c balsamic vinegar
- 2 cloves garlic, minced
- 1 pint grape tomatoes, halved
- 2 Tbs shredded basil
- Mozzarella cheese

Directions
In large skillet over medium high heat, heat oil.
Season chicken with salt and pepper and cook until golden, about 6 minutes on each side. Transfer to plate.
Add vinegar to skillet to deglaze, add garlic and stir until fragrant, 1 minute. Add tomatoes and season with salt. Let simmer until soft, 5-7 minutes.
Stir in basil
Return chicken to skillet and nestle in tomatoes. Top with cheese and cover with lid to melt cheese.
