Heat oven to 35O°. In a bowl, whisk 2 cups wheat flour and 1 tsp cinnamon. Add 1 cup canned pumpkin, mix until a dough forms. Roll out to 1/4" thick. Using a 3" round biscuit cutter, cut out cookies.
