Spiced Potatoes with Spinach
This is a classic Indian accompaniment for many different curries or plainer main vegetable dishes. It is very quick to cook.

- 3 tablespoons vegetable oil
- 1 red onion, sliced
- 2 garlic cloves, crushed
- 1/2 teaspoon chili powder
- 2 teaspoons ground coriander
- 1 teaspoon ground cumin
- 1/2 cup vegetable stock
- 10 ounces potatoes, diced
- 18 ounces baby spinach
- 1 red chili, sliced
- salt and pepper

Step 1
Saute onion and garlic in a skillet for about 3 minutes
Stir in chili, coriander and cumin, cook for another minute stirring constantly
Add vegetable stock diced potatoes and spinach and bring to a boil.
Reduce heat, cover and simmer for about another 10 minutes (until potatoes are tender).
Uncover, season to taste with salt and pepper, add the chili, and cook for 2-3 minutes more. Transfer to a warmed serving dish and serve immediately.
