I love frozen peppermint patties…and brownies…and magic shell…I decided to make bombes with a brownie base, vanilla ice cream, and homemade magic shell, with a peppermint patty hiding right in the middle.

Ingredients

  • Magic Shell:
  • 13 ×9 pan brownies, baked and cooled (I used a boxed mix and added 2 tsp of mint extract)
  • 1 quart vanilla ice cream, softened to a spreadable consistency
  • 12 Peppermint Patties
  • 1 cup semisweet chocolate chips
  • 3 TBS vegetable shortening

Preparation

Step 1

1. Line molds with plastic wrap.

2. Fill 2/3 full with softened ice cream, spreading so that the top is level. Place a peppermint patty on top.

3. Using a glass or biscuit cutter that is close in diameter to the size of your mold, cut brownies into circles. Gently press a brownie into the pan. Place pan in the freezer for at least an hour.

4. Make magic shell: In a microwave safe bowl, microwave chocolate chips and shortening for about 2 minutes, stopping to stir every 30 seconds until smooth. When ready to serve bombes, unmold and spoon chocolate over them.

**makes 12 ice cream treats

These are really so so versatile…the ice cream and candy combinations are endless and these are great for parties. Just prep ahead and have ready to go in the freezer.
