Christmas Cranberry Salad

Pretty Christmas fruit salad, and soo good too! Your holiday guests will love it.

Ingredients
- 2 cups ripe fresh cranberries
- 3/4 to 1 cup sugar (depends on tartness of cranberries)
- 1 (20 oz) can crushed pineapple in 100% juice, drained well (I used Dole)
- 2 1/2 cups mini marshmallows
- 1 (8 oz) tub Cool Whip (or same amount prepared whipped cream)
- 1/3 cup chopped pecans, optional (I omitted)

Step 1
Drain pineapple well in a colander then press down on it with your hand to squeeze all the juice out. (Nobody wants a watery salad.) Set aside.
Grind cranberries in a blender; then add the sugar and pulse blender a few more times to combine. Pour into a mixing bowl. Stir in the pineapple. Gently fold in the Cool Whip, marshmallows, and pecans if using.
Transfer to a serving bowl and refrigerate until serving time.
NOTE:
You can extend this recipe (or to reduce tartness) by adding a little more Cool Whip and marshmallows.
