Pan Fried Liver with Thyme 1 Picture

Ingredients

  • 2 2 4 1/2 of calves liver about 4 1/2 oz
  • 1 1 1 tbsp seasoned flower
  • 2 2 2 tsp oil
  • 1 1 1 tbsp butter
  • 2 2 2 tbsp white wine
  • 1/2 1/2 1/2 tsp fresh thyme or pinch of dried thyme
  • 1 1 1 pinch of finely grated lime or lemon rind
  • 2 2 2 tsp lemon juice
  • 1 1 1 tsp capers
  • 1-2 1-2 1-2 tbsp heavy cream
  • Salt and pepper

Preparation

Step 1

Trim liver and toss in seasoned flour until evenly coated
Heat the oil and butter in a frying pan.
When foaming add the liver and fry for 2-3 minutes, transfer to a plate and keep warm
Add the wine, 1 tbsp of water, thyme, citrus rind, lemon juice
and capers, plus seasoning to pan juices
Heat gently until bubbling and syrupy
Add the cream to the sauce and reheat gently
Adjust the seasoning and spoon over liver.
