  • 8 cups romaine lettuce, large chopped
  • 1 cup celery, medium dice
  • 1 Granny Smith apple, peeled, cored, and medium dice
  • 1/2 cup toasted pecans, rough chopped
  • 1/2 cup dried cranberries
  • 2 heads Belgium endive, cored and medium dice
  • 1 cup turkey meat, cooked and diced
  • 1/2 cup blue cheese crumbles
  • Dressing:
  • 1/4 cup olive oil
  • 2 Tbsp apple cider vinegar
  • 2 Tbsp pure maple syrup
  • 1-1/2 Tbsp Dijon mustard
  • 1 Tbsp shallot, minced
  • 1 tsp salt
  • 1/2 tsp pepper

Preparation:

To prepare the salad, add the romaine, celery, apple, pecans, cranberries, endive, turkey, and blue cheese to a large mixing bowl.


To prepare the dressing, whisk together the olive oil, cider vinegar, maple syrup, mustard, shallot, salt, and pepper in a small mixing bowl.


To assemble the dish, pour the dressing over the salad and toss to coat.
