Potato Salad

This is a great potato salad that I first had when I met Les Guthrie and had dinner with his family. His mom made this and it was so different from my mom's who put lots of celery and no vinegar or oil in hers. I liked both, but I know that everyone always asked me to made this style.

Ingredients
- 4 pounds potatoes
- (you can use new potatoes, old potatoes,
- red potatoes, yukon gold)
- 1/2 cup finely chopped onion
- salt and pepper to taste
- 1/4 cup parsley
- canola oil
- cider vinegar
- Hellman's mayonnaise

Preparation
Step 1
Cover whole potatoes with water and cook until tender. Drain, peel when cool and cut into thin slices.
Add onion, salt and pepper, parsley flakes.
Add about 1/3 cup oil and mix lightly.
Add about 1/4 cup vinegar and mix.
Add mayonnaise 1/4 cup at a time and mix until creamy.
Try not to mash the potatoes up, just keep folding the ingredients into them.
