Ingredients

  • 2 cups all purpose flour
  • 1 1/4 cups white sugar
  • 2 tsp baking soda
  • 2 tsp cinnamon
  • 1/2 tsp salt
  • 2 cups grated carrot
  • 1/2 cup raisins
  • 1/2 cup chopped nuts
  • 1/2 cup coconut
  • 1 apple, peeled, cored and grated
  • 3 eggs
  • 1 cup salad oil
  • 2 tsp vanilla

Preparation

Step 1

Into a large bowl, add flour, sugar, baking soda,cinnamon and salt. Stir in carrot, raisins, nuts, coconut and apple.

In another bowl beat the eggs, oil and vanilla. Stir in the flour mixture until just combined.

Bake in a 350 degree oven for 20 minutes. Makes 12-14 muffins
