Ginger-Glazed Chicken

Ingredients
- 1 lrg orange, zested and juice
- 2 tbsp soy sauce, like Kikkoman
- 4 tbsp chopped gingerroot, devided
- 1 1/2 tbsp chopped garlic
- 1 tsp salt
- 1/2 tsp red pepper flakes
- 1 whole roasting chicken (6 lbs)

Step 1
1.) Heat oven to 400 degrees F. In skillet, bring 1/2 cup orange juice, soy sauce and 1 tbsp gingerroot to a boil. Cook 3 min. more, or until reduced by 1/2. Add 1 tbs orange zest. Set aside.
2.) In bowl, combine next 3 ingredients and remaining gingerroot; spread 1/2 mixture under chicken skin and 1/2 in cavity. Place orange rind in cavity. Tie legs together with string.
3.) Place chicken in roasting pan; roast 20 min. Reduce oven to 350 degrees F. Roast 1 hour more, or until thermometer inserted in thigh, reads 170 degrees F, brushing with orange mixture after 50 minutes.
