Banana Pudding

Ingredients

  • 2/3 cup sugar
  • 1/3 cup all-purpose flour
  • 1/4 teaspoon salt
  • 3 eggs beaten
  • 2 cups milk
  • 1 teaspoon butter, softened
  • 4 bananas, peeled and sliced
  • 1 12 ounce package of vanilla wafer cookies
  • Crumbled wafers for topping

Preparation

Step 1

In medium saucepan combine sugar, flour and salt
Add eggs stir well
Stir in milk and cook over medium-low heat, stirring constantly
When mixture begins to thicken, remove from heat and continue to stir
Add in vanilla and butter until smooth
Grease bottom of 8 x 8 oven-proof dish. Put layer of cookies on bottom
Cover with sliced bananas. Ladle half of pudding over it. Repeat layer
Top off with crumbled vanilla wafers and chill in fridge for about an hour
Serve topped with whipped cream
