Ingredients
- 1 1/2 cups warm water (105-110 degrees)
- 2 Tablespoons sugar
- 2 1/4 teaspoons active dry yeast (about a 1/4 oz. packet)
- 3 1/2 cups all purpose flour
- 1/2 cup bread flour
- 1 Tablespoon sea salt
- 3 Tablespoons extra-virgin olive oil

Step 1
Combine water, sugar and yeast. Proof until foamy, about 5 minutes.
Mix flours and salt in bowl of a heavy duty stand mixer fitted with dough hook. Add oil to yeast mixture. Pour yeast mixture into flour and knead at low speed for 10 minutes (or the same amount of time if kneading by hand). Dough will will be elastic and slightly sticky.
Place dough in a lightly oiled bowl, and turn to coat. Cover bowl with plastic wrap; let dough rise 1 hours in a warm place, until doubled.
Punch down, divide into 3 pieces, and shape into balls. Place on a floured work surface. Lighlty brush with oil, cover completely with plastic wrap, and let rise another 45 minutes.
