Ingredients

  • Each Cake Layer:
  • 2 tablespoons almond flour
  • 1 tablespoon coconut flour
  • 1/4 teaspoon baking powder
  • dash salt
  • 1 tablespoon coconut oil, melted
  • 2 tablespoons plus 1 teaspoon almond milk
  • 1 egg
  • 1 tablespoons Natvia sweetener
  • 1/2 teaspoon vanilla extract
  • Low Carb Frosting (I used Buttercream Frosting)
  • Frosting:
  • 1/4 cup whipping cream
  • 12 drops liquid sucralose or stevia gycerite
  • 1/4 cup butter
  • 1/2 teaspoon vanilla
  • 1/4 teaspoon xanthan gum
  • 1/2 ounce cream cheese
  • 2 Tablespoons Swerve Confectioners Powder

Preparation

Step 1

1.Mix together almond flour, coconut flour, baking powder, and salt in small bowl. Set aside.
2.Melt coconut oil in small round microwavable cup that will be used to bake cake. You can use a ramkin or 2-cup Pyrex storage container.
3.With fork, stir almond milk, egg, sweetener and vanilla extract into melted coconut oil.
4.Beat dry ingredients into liquid ingredients with fork until well combined.
5.Microwave from 1 1/2 to 2 minutes or until cake is no longer wet. It took 2 minutes to bake in my 900 watt microwave.
6.Remove cake layer from pan and cool on rack.
7.Repeat steps for each cake layer.
8.Frost with icing if desired.


Frosting:
1.Heat whipping cream, liquid sweetener and butter in saucepan until boiling point reached. Remove from heat.
2.Stir in vanilla extract, and xanthan gum. Chill for two hours.
3.Add cream cheese and Swerve. Beat with electric mixer until smooth and at frosting consistency.


Notes

Chocolate Frosting can be used.

Each cake layer is two servings. So, four servings all together.

Nutrition per serving (half cake layer): 132 calories, 11.1g fat, 182mg sodium, 6.2g carbs, 2.1g fiber, 2.3g erythritol, 1.8g net carbs, 5.2g protein.
