Granola

Crispy, crunchy granola made the healthy way. Great with yogurt or hot cereal.
This is so good as a snack, I can't make it fast enough!

Ingredients
- NOTE:
- 1 lb rolled oats
- 1 C shredded, coconut (sweetened or unsweetened)
- 1/2 C almonds, slivered
- 2 Tbls sesame seeds (optional)
- 1/2 C wheat germ
- 1/2 tsp coarse salt
- 1/2 C safflower oil
- 1/2 C honey
- 1/3 C water
- 1 1/2 tsp vanilla
- 1/2 C golden raisins
- 1/2 C dried cranberries, blueberries or other dried fruit, chopped
- I add 1/4 C unsalted sunflower seeds; 1/2 tsp cinnamon and 1/4 tsp fresh ground nutmeg for extra flavor.

Preparation
Step 1
Preheat oven to 250 degrees.
In a large bowl, toss together the oats, almonds, sesame seeds, wheat germ and salt.
Separately whisk together the oil, honey, vanilla and water, then stir into the oat mixture.
Spread the granola on 2 rimmed sheet pans. Bake 1 to 1 1/2 hours or until golden brown.
NOTE: stir after the first 10 minutes and again after 30 minutes.
Remove from oven toss in dried fruit. Cool completely then store in airtight containers.
