I make this with leftover grilled chicken breast. It can be dressed up by adding some or all of the optional ingredients.

  • 1 1/2 cups cubed cooked chicken breast (2 medium)
  • 1/4 cup of mayonnaise (may need to add more)
  • 1/4 cup sour cream (may need to add more)
  • 1/4 teaspoon dijon mustard or to taste
  • pinch of curry powder
  • salt and pepper to taste
  • optional
  • 1/2 cup quartered red or green grapes
  • 1/2 cup diced celery
  • 1/4 cup chopped walnuts (I prefer toasted)
