Ingredients

- 4 tbsp shallot, minced
- 1 1/2 tbsp garlic, minced
- 4 tbsp evoo
- 1 15 0z can chickpeas rinsed and drained
- 1/4 c parmesan cheese
- 1 tsp basil
- 1 tsp oregano
- 1/4 c parsley, chopped
- 1 c bread crumbs
- 3 tbsp marinara sauce
- 1/4 tsp each salt and pepper
- marinara sauce
- 4 buns
- fresh parsley
- red onion

Preparation
Step 1
heat large skillet over medium heat. saute shallots and garlic in 1 tbsp of oil until soft and translucent. 3-4 minutes.
add garlic and shallot to medium bowl. add chickpeas and use fork to mash. the mixture should be dough like with only a few whole beans remaining.
add 2 tbsp oil, parmesan, basil,oregano,parsley,bread crumbs, marinara sauce, salt and pepper. stir to combine. a moldable dough should form. add more oil if its to dry or more bread crumbs if to wet. taste and adjust seasonings as needed.
heat same skillet over medium heat.
divide mixture into 4 patties. 1/2 cup measuring cup to mold patties. then flatten to 1 inch thick with hands.
gently coat burgers with additional bread crumbs and parmesan on both sides.
add enough oil to form a thin layer on bottom of hot skillet then add the burgers. brown for 5 minutes on each side, reduce heat if burgers get to brown.
serve as is or place on baking sheet and bake in 375 oven for 10-20 minutes to crisp them up.
warm marinara sauce, toast buns.
serve by laying parsley on bottom half of bun, top with burger, onion and marinara sauce.
reheat in 350 degree oven for 20 minutes for leftovers.
