Ingredients
- 3 cups Boiling Water
- 2 cups Cracked Wheat
- 1/2 cup Shortening
- 1 Tbsp Salt
- 1/2 cup Brown Sugar
- 1/2 cup Lukewarm Water
- 1 tsp White Sugar
- 2 Packets Yeast
- 5-6 cups Flour

Preparation
Step 1
Dissolve yeast in the 1/2 cup lukewarm water with the white sugar.
Pour boiling water over the cracked wheat.
Add the shortening, brown sugar and salt.
Let cool to lukewarm then stir in the dissolved yeast.
Stir in the flour one cup at a time until you can handle the dough--it should still be moist.
Turn out on a well-floured board and knead until smooth. It will be too soft to be as elastic as Basic White Bread.
Return to bowl and let rise in a warm place until it has doubled.
Punch down and shape into loaves.
Place in greased pans and let rise until the dough reaches the tops of the pans.
Bake at 400 degrees for about 45 minutes.
