Homemade cookies are the best, and if you love peanut butter, then this recipe for Soft Peanut Butter Cookies can’t be beat. I love it because it is quite easy to put together, and I usually have all of the ingredients on hand. It’s also a great hit with my family, so I usually double the batch and freeze them for future use. I have even caught my hubby eating them frozen, right out of the freezer!

In a large bowl, mix together the brown sugar, white sugar, butter, and egg. Whip until creamy. Add in the peanut butter, vanilla, and flour. Mix in the baking soda last and mix well to avoid and clumps.
