  • Pudding:
  • 4 1/2 cups stale French bread, torn into large pieces, crusts on
  • 1/2 cup raisins
  • 1/2 cup chopped dried apricots
  • 4 eggs
  • 2 1/2 cups whole milk
  • 1/2 cup half-and-half
  • 3/4 cup sugar
  • 1 1/2 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • Topping:
  • 3 tbsp sugar
  • 1/2 tsp cinnamon

Preparation

Step 1

Preheat oven to 350 F and butter a shallow 2-quart baking dish.

Arrange bread in dish. Sprinkle raisins and apricots on top.

In a large bowl, beat eggs until frothy. Add milk, half-and-half, sugar, vanilla, cinnamon, and salt. Pour over bread, pressing gently to submerge slices.

Combine topping ingredients; sprinkle on pudding.

Place a baking sheet with a 2-inch rim in oven; set baking dish on sheet. Add water to a depth of 1 inch.

Bake for 50 minutes or until a toothpick inserted into center comes out clean. Cool. Serve with whipped cream, if desired.
