Ingredients

  • 2 (2 1/2 pound) boneless pork loin roasts
  • 3 garlic cloves, slivered
  • 1/2 cup fresh lemon juice
  • 2 Tbsp. olive oil
  • 1 Tbsp. Greek Seasoning
  • 1/2 cup chicken broth
  • 1 cup light soy sauce
  • Garnishes: lemon slices, fresh herbs

Step 1

Cut 1/2 inch slits all over roasts. Insert garlic slivers.

Stir together 1/2 cup lemon juice, olive oil, and Greek Seasoning. Rub evenly over pork loin roasts. Place in a shallow dish or heavy duty zip top bag. Cover or seal, and chill 8 hours.

Remove pork from marinade, reserving marinade. Place roasts on a lightly greased rack in an aluminum foil lined roasting pan.

Stir together reserved marinade, broth, and soy sauce, pour into roasting pan.

Bake at 375° for 1 hour and 5 minutes, or until meat thermometer reads 155°, basting every 20 minutes. Let stand 10 minutes before serving. Serve with pan drippings. Garnish if desired.
