Ingredients

  • 7 chicken bouillon cubes or 2 1/4 tsp Watkins chicken soup base
  • 1 1/2 cups water
  • 1 medium onion, chopped
  • 3 ribs celery, finely chopped
  • 1 medium bunch of broccoli, cut into pieces
  • 3 medium potatoes, chopped
  • 1/2 cup butter, melted
  • 1/2 cup flour
  • 1 Qt half and half or I use canned milk(evaporated)
  • 1/2 cup shredded cheese

Preparation

Step 1

In a large soup pot, combine cubes and water. Cook over medium heat until cubes are dissolved. Add onion, celery, broccoli and potatoes. Cook until tender, 15-20 minutes. Add butter and flour. Stir until slightly thickened. Add half and half or evaporated milk and heat through. Top pot of soup with cheese and cook until cheese melts. Additional cheese can be added to individual servings. Makes 4-6 servings.
