- Crust:
- 1 cup water
- 1/2 cup butter
- 1 cup flour
- 4 large eggs
- Filling:
- 1 8 ounce package cream cheese, softened
- 1 large box vanilla instant puddin
- 3 cups milk
- Topping:
- 1-8 oz cool whip

Preparation
Step 1
Preheat oven 400 degrees.
Eclair Base:
Bring the water, butter and salt to boil until butter is melted.
Add flour all at once and mix rapidly with wooden spoon. Remove from heat and stir until mixture leaves the sides of pan and form a ball.
Add eggs, one at a time, beating thoroughly after each addition until completely smooth.
Spread in an ungreased 10 x 5 inch baking pan.
Bake until golden brown, about 35 minutes. Crust will puff up the sides of the pan while in the oven.
When removed from the oven, prick bubbles with fork. let cool.
Use electric mixer beat pudding mix, milk and softened cream cheese together until thoroughly blended.
Spread the pudding mixture over the cool baked crust.
Spread Cool whip over pudding mixture.
