Ingredients

  • 1 bunch cilantro, leaves only (about 1/2 cup, coarsely chopped)
  • 1 jalapeno pepper, minced fine (if you don't like heat, you can either omit this or just use about half of a pepper)
  • 2 garlic cloves pressed or minced
  • 1/2 cup red onion, diced small
  • juice from 1 lime (fresh is best, but you can use about 2 tablespoons bottle lime juice, if needed)
  • 4 medium roma tomatoes, diced
  • 4 avocados, diced

To prepare your fresh guacamole:

In a large bowl, combine the cilantro, jalapeno pepper, garlic, red onion and lime juice. Add chopped tomatoes and mix.

Gently fold in the diced avocados.

Most guacamole recipes call for smashing the avocado, which is always an option, but if you have perfect and beautiful avocados, dicing them rather than smashing them as in this recipe is a great way to show them off, and makes it more of an unusual avocado dip rather than a traditional guacamole.

 

Transfer your prepared guacamole to a serving bowl, if desired, and serve with fresh veggies or tortilla chips.
