PRESSURE COOKER BROCCOLI WITH GARLIC

Ingredients
- 1 – 2 heads of broccoli (roughly 0.8 pound/ 360 grams each), cut into 2 - 4 cups florets
- 1/2 cup water
- 6 garlic cloves, minced
- 1 tablespoon peanut oil
- Optional: 1 tablespoon rice wine
- Fine Sea Salt (or table salt) to taste (roughly 1/8 teaspoon salt – 1/4 teaspoon salt)

Pressure Cook the Broccoli: Pour in ½ cup of cold running tap water. Place a steamer rack into the pressure cooker. Place the broccoli florets onto the steamer rack. Lock the pressure cooker lid and cook at Low Pressure for 0 minutes. Turn off the heat and do a quick release. Open the lid carefully.
Cool the Broccoli: To stop the broccoli from cooking, quickly place the broccoli in an ice bath or place them under cold running tap water. Drain the water, set aside the broccoli to air dry.
*Optional Stir-fry Step: If you have a wok and don’t mind washing it, we recommend doing the Sauté Stir-fry the Garlic & Broccoli Step with a wok on the stovetop over HIGH heat. The flavor will increase by threefold (estimated :P).
Restaurants usually finish the dish by adding chicken stock and thicken the sauce with cornstarch water. The Instant Pot Electric Pressure Cooker does not get hot enough for those steps, so we omitted them.
If you are using a wok on high heat, after the salting step, add in 1/3 cup unsalted chicken stock. Bring it to a boil quickly and thicken it by gradually adding the (1 ½ tablespoon) cornstarch + (2 tablespoons) water mixture.
Prepare Pressure Cooker: Remove the hot water and towel dry the inner pot. Heat up your pressure cooker (Instant Pot: press Sauté button and click the adjust button to go to Sauté More function). Make sure your pot is as hot as it can be when you place the garlic into the pot (Instant Pot users: wait until the indicator says HOT).
Sauté the Garlic & Broccoli: Add 1 tablespoon of peanut oil into the pot. Ensure to coat the oil over the whole bottom of the pot. Add in the minced garlic, sauté the garlic for roughly 25 - 30 seconds. Do not let the garlic burn. Pour in the air dried broccoli and (optional) 1 tablespoon of rice wine and stir for 30 seconds. Season with fine sea salt to taste (We added ~ ⅙ teaspoon of salt). Stir it around for another 30 seconds. Done!
