  • Whole turkey, thawed
  • 1 stick butter
  • 1/4 c. flour
  • 1/2 tsp. salt
  • 1/4 tsp. pepper

Step 1

Preheat oven to 250 degrees. Tear 2-2 foot long sheets of heavy duty foil, and fold one edge of each sheet together to create one long sheet.

Remove neck and innards from turkey's cavity and discard. Rinse turkey, inside and out, and pat dry. Combine salt and pepper and rub the inside of the cavity with the mixture. Melt butter and stir in flour to make a paste. Rub outside of turkey (on all sides) with butter paste. Place turkey, breast side down, in a roasting pan.

Create a "tent" with the foil and secure to edges of roasting pan. Place in oven and roast, basting every 30 min., 8 hours. Remove from oven and let rest at least 20 minutes before carving.
