  • 1 teaspoon fresh ginger, peeled and chopped finely
  • 1 tsp salt
  • 1/2 orange, quartered
  • 500 ml water
  • 250 ml honey
  • 125 g butter
  • 1 tsp lemon juice
  • 250 ml orange juice

Step 1

Preheat oven to 175 ° C.
Mix together Basil, ginger and salt and rub the duck inside and out with the mixture.
Fill duck with orange quarters and put in a roasting pan.
Pour in water.
Place orange juice in a small saucepan and cook about 20 minutes until it is reduced to half. Add honey, butter and lemon juice and cook everything on low heat to make syrup.
Pour a little of the mixture over the duck, keep the rest for basting. Cover roasting pan with a lid.
Place duck in preheated oven and roast for 30 minutes. Turn duck (breast side down), coat with the marinade and reduce heat to 150 C. Continue to cook for about 2 to 2 1/2 hours until it is very tender.
Every now and then coat with the marinade.
If desired, turn the duck breast side up for the last minutes, so that the skin is brown.
