- 12 oz cream cheese, room temperature
- 1 C heavy cream, COLD
- 1 lemon zested
- 1 Tbl lemon juice
- 1 tsp kosher salt
- 1/2 tsp pepper, fresh ground

Step 1
In the bowl of a mixer, add the cream cheese and cream and whip until firm, like whipped cream.
Add in the lemon zest and juice, salt and pepper, mix well.
Line a strainer/sieve with cheese cloth. Pour in the cheese mixture, fold over the cheese cloth to cover the mixture.
Put the strainer over a bowl and refrigerate over night to firm up.
When ready to serve, uncover and turn out on a plate.
