  • 1 LB Fish of your choice,
  • I use Cod
  • 1 Medium Onion,
  • thinly sliced
  • 1 C Fennel,
  • thinly sliced
  • 2 Cloves Garlic,
  • thinly sliced
  • Hand full Parsley,
  • chopped
  • 3 Tbsp Oil
  • Sea Salt & Ground Pepper
  • 28 oz Can Crushed Tomatoes
  • 1 1/2 to 3 C Water

Preparation

Step 1

Heat oil in large skillet.
Add onion, garlic and fennel.
Cook until tender, about
10-15 minutes. Add fish, water
tomatoes and parsley.
Simmer 15 minutes more till
fish is flakey.
