Ingredients
- 1-3 1/2 to 4 LB
- cut up chicken
- 1/4 C Flour
- 1 1/2 tsp Salt
- Pepper to Taste
- 1/2 tsp Paprika
- 1/4 tsp Thyme
- 1/2 C Chopped Celery
- 1/2 C Chopped Onion
- 1 Clove crushed Garlic
- 1-6 oz Can Mushrooms
- 1-28 oz Can Tomatoes,
- crushed (2 cups)
- 1/4 C Oil

Preparation
Step 1
Large skillet needed.
Combine flour, salt, pepper,
paprika & thyme in a large bowl.
Coat chicken in dry ingredients.
Heat oil in skillet, add chicken
to brown. As they brown move to plate.
When all chicken is out of skillet
add celery, onion, garlic and
mushrooms, cook till tender.
Add chicken back to skillet with
2 cups tomatoes. Cover, simmer
over low heat 1 1/2 to 2 hours.
Serve with pasta of your choice.
I like to put black olives and
a splash of red wine in with
the tomatoes.
