Chicken Paprikash. *

This is an easy recipe for old world comfort food. You can serve it with mashed potatoes, or spaetzle or bread dumplings and a side of a green vegetable or salad.

Ingredients
- 2 Tbl vegetable oil
- 1 3 lb fryer, cut into pieces
- 2 bay leaves
- 1/4 C flour
- 2 medium onions sliced very thin
- 1 1/2 tsp salt
- 1 Tbl Hungarian Paprika
- 1/8 tsp pepper
- 1 1/2 to 2 cups of chicken stock
- 1/2 C sour cream

In a large skillet, heat oil.
Season the chicken with salt and pepper and cook in the oil with the bay leaves for about 10 minutes, or until the chicken is lightly browned.
Remove chicken from the pan and set aside.
Add the flour and the onions to the skillet, cook for about 2 minutes stirring constantly. Stir in salt, paprika, pepper and stock, stir well. Add the chicken back into the pan, cover, reduce the heat to medium/medium low. Simmer for another 30 to 60 minutes, until the chicken is fork tender.
In a small bowl, combine the sour cream with a little of the pan juices to temper the sour cream, stir well as you add it to the pan and simmer to the right thickness. Add the chicken back to the pan for about 5 to 10 minutes then serve.
